Christmas has always been large part of my life. From early childhood I remember it being that one time of year when adults came together in full jovial form. I come from a very happy family, but Christmas always seemed to bring laughter with conversation that filled the room from eggnog brunch to punch bowl twilight. As I entered my adult years, I quickly realized that the eggnog and punch that we drank as kids was not what the adults were drinking. Sonnentor’s Organic Santa’s Secret

Description: Cinnamon sweet, Christmas citrus spice. No wonder Santa keeps this one a secret. The Perfect stocking stuffer!

Ingredients: Apple pieces, Hibiscus, Rose hip, Cinnamon Ceylon, Pears, Quince, Essential Oils, Organic Orange, Cloves, Vanilla.

Heath Benefits: The phrase “herbal tea” or “tisanes” usually refers to infusions of fruit or herbs made without the tea plant. Description: A great blend of black tea with almond gives this tea a Marzipan flavour.

Chocolate Tea Truffles

This month for our featured recipe, we decided to give truffles a try!

I have always been strangely intimidated by truffles – somehow more than trying Martha Stewart’s homemade puff pastry recipe, or tarts, or triple layer chocolate cakes…so I was pleasantly surprised by how simple and easy these truffles are to make! And the teas this month lend themselves so well to this Christmas treat. I was particularly excited about the combination of Cherry Rose with chocolate, and it was incredible. I thought Snowflake would be neat rolled in coconut, but we liked them all rolled in cocoa the best. Feel free to experiment! We tried the recipe with Rooibos Nut Crunch (loved this one!) as well.

*A special note to all our impatient bakers out there: the tea taste comes through much more once the chocolate has chilled a bit…so don’t be disappointed if it doesn’t seem strong enough at first.

For tea-infused truffles, simply infuse the cream with tea by doubling the cream (you lose half to the tea leaves), and boiling it with 5tbs/cup of cream. This will give you ½ cup of infused deliciousness.

-250 grams (2 cups) dark chocolate (I use dark chocolate chips)

-5 tbs loose-leaf tea

-1 cup cream

-cocoa, for coating…or anything else you can think of!

Put the cream and loose tea leaves into a saucepan, stir to combine and bring to a simmer. Once it’s started simmering, you can turn it off and let it cool. I put mine in the fridge and left it for hours or ideally overnight. When you’re ready to mix it with the chocolate, reheat it (don’t be scared if it looks like a clump of tea, it will loosen up once you heat it) and then strain into a glass measuring cup using a fine metal sieve. Press as much cream as you can through the sieve using the back of a spoon.

You should now have ½ cup of cream. If the cream has cooled with all the time it’s taken you to strain it (this happened to me), reheat it briefly if you can in the microwave, but be careful not to microwave it once the chocolate is in it, as it might seize and turn weird and clumpy (this, sadly, happened to me too). Then simply add in your chocolate and stir like crazy so that it all melts and incorporates.

Chill your chocolate mixture completely in the fridge. Once it’s firm, scoop spoonfuls of the mixture and roll it into balls, then coat in cocoa or your coating of choice.

Holiday Cocktails from the Special Edition December Tea Box

I come from a very happy family, but Christmas always seemed to bring laughter and celebration that filled the room starting from eggnog brunch to punch bowl twilight.

As I entered my adult years, I quickly realized that the eggnog and punch that we drank as kids was not what the adults were drinking. As an ode to innocent memories past, this Christmas season we have created a series of tea cocktail recipes. The top four, as voted by our members, have been listed below.

COCKTAILRooibos Nut Eggnog

INGREDIENTS:

PART ONE

4 cups milk

5 tbsp Rooibos Nut Crunch Tea

5 cloves

½ tsp vanilla extract

1 tsp ground cinnamon

PART TWO

1 ½ cups sugar

12 egg yolks

2 ½ cups light rum

4 cups light cream

2 tsp vanilla extract

½ tsp ground nutmeg

DIRECTIONS:


PART ONE

  1. Combine milk, cloves, ½ teaspoon vanilla extract, Rooibos Nut Crunch Tea and cinnamon in a saucepan, and heat over a medium setting until it warms.
  2. Once the milk begins to boil, lower the heat to keep it at a light boil for 5 minutes.

PART TWO

  1. In a large bowl, combine the egg yolks and sugar. Whisk together until fluffy.
  2. Slowly whisk the hot milk mixture from part one into the eggs.
  3. Pour entire mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil.
  4. Strain to remove cloves and tea, and let cool for about an hour.
  5. Stir in rum, cream, remaining vanilla extract and nutmeg.
  6. Refrigerate overnight before serving.

Note: Serves about 12. You can half the recipe for smaller dinner parties.

COCKTAIL – Candy Cane Martini

INGREDIENTS:

2 oz vodka

1 oz orange juice

6 oz Peppermint tea, chilled

½ oz lime juice

2 tbsp sugar

DIRECTIONS:

  1. Brew 2 tbsp of Peppermint tea in 1 cup of boiling water for 5 mins, and then set aside to cool.
  2. Pour the ingredients into a cocktail shaker with ice. Shake well.
  3. Strain into 2 chilled cocktail glasses.

Note: Keep the left over tea cool in the fridge until you are ready to make the second round. Serves 2.

COCKTAIL Santa’s Secret Martini

INGREDIENTS:

2 oz vodka

2 oz orange juice

3 oz Santa’s Secret tea, chilled

1 tbsp sugar

DIRECTIONS:

  1. Brew 2 tbsp of Santa’s Secret tea in 1 cup of boiling water for 5 mins, and then set aside to cool.
  2. Pour the ingredients into a cocktail shaker with ice. Shake well.
  3. Strain into 2 chilled cocktail glasses.

Note: Keep the left over tea cool in the fridge until you are ready to make the second round. Serves 2.

COCKTAIL: Green Tea Holiday Punch

INGREDIENTS:

750 mL bottle dark rum

750 mL bottle dry red wine

3 cups Cherry Rose Green tea

1 lb superfine sugar

1 large orange, for juice

1 lemon, for juice

1 BBQ lighter

DIRECTIONS:

  1. Brew the Cherry Rose Green Tea by adding 3 cups of not-quite boiling water to 6 tablespoons of tea. Brew for about 4 minutes, then set to the side and allow to cool.
  2. Heat the wine and chilled green tea with lemon and orange juices in a saucepan or chafing dish. Do not allow mixture to boil.
  3. One heated, transfer the mixture into a heatproof punch bowl.
  4. Place as much sugar as possible into a large ladle, and any excess sugar into the punch bowl.
  5. While holding the ladle over top of the punch bowl, saturate the sugar with dark rum.
  6. Ignite the rum and sugar mixture sitting in the ladle with the BBQ lighter, and then pour while still aflame into the punch bowl.
  7. Stir well and extinguish the flames.
  8. Pour the remainder of the rum into the punch. Stir well.

Note: This is the perfect drink for a holiday party, as the recipe makes 27 servings. Also, because there’s fire involved, don’t start making this one if you’re already drunk. It won’t end well.

November’s Tea – 2013

Ladies and Gentlemen, are you ready for ‘Round 2’ of the Earl Grey – White Tea Challenge? This month, we have two light heavyweight contenders. Both of these teas came in second place in their respective categories: Rishi Tea’s Earl Grey Supreme and Might Leaf’s White Orchard. We can’t wait to hear what you think. Look for ‘Round 3’ in February’s Tea Box: The Heavy Weights… With autumn’s chill upon us, we thought we would warm things up with Teaja’s Naked Chai, an incredibly smooth spiced herbal chai. For the herbal chai category, this is definitely one of my favourites! And bringing back a classic in the rooibos category: Aromatica’s Vanilla Honeybush. September 2012 was the last time we featured this tea and it was a fan favourite. For as common as vanilla blended with honeybush is, this tea really distinguishes itself with its golden caramel silky taste. Enjoy!

October’s Tea 2013

Earl Grey tea has been at the heart of Tea Sparrow since we started this club. We have been sent well over 100 different styles of Earl Grey tea throughout the years and to this day only 4 have ever made the grade among our Tea Party enthusiasts. This month, we’re featuring not one, but two of them: Florapharm’s Manhattan Earl Grey and Aromatica’s Organic Earl Grey Vanilla Rooibos. We also started our White Tea challenge back in March of this year and after trying 63 different white teas and white tea blends, we have rounded it down to our members’ 3 favourites. This month, we introduce you to The Tea Spot’s White Wedding Tea. August’s Teas

Over the next three months we’ll be featuring teas from one of my recent favourite tea companies: Royal Tea of Kenya. I’ve been drinking unblended single estate teas from China, India, Sri Lanka and Japan for over 15 years, so my excitement at finding a quality importer of Kenyan teas has put me on cloud nine. Their teas are unblended and pesticide-free, owned and harvested by Kenyan farmers throughout the country. Royal Tea of Kenya imports teas directly from the Kenyan small-scale farmers to bring you the very best of what Kenya has to offer. This month we have Mt. Abedares, a black tea with natural grapefruit notes. As well this month, we have the return of Meditative Mind, one of Tea Sparrow’s all time favourites. For my fiancée Ariella, it was her first time trying the tea and it instantly inspired her to create an ice cream that is pure culinary genius. Royal Tea of Kenya’s Mt. Abedares Premium Tea

Description: This tea is a lovely gem among the expanding range of excellent black teas from Kenya. The sweet aroma of the dry leaf promises a lovely brew in the cup, and the tea exceeds that promise, brewing into incredibly rich, flavorful liquor. The tea is a honey-amber color, with strong citrus notes of blood orange and grapefruit.

Ingredients: Orthodox Black Kenya Tea

Steeping Instructions: Steep 1 teaspoons per 8 ounces (1 cup) of boiling water for 4 minutes.

A Meditative Mind Rose Cream Sensation

My fiancée Ariella is a supreme baker and ice cream maker. Before we met, my freezer only knew ice cream brands like Haagen Dagz and Ben & Jerry’s. However now that I’ve been spoiled by her incredible ice creams like vanilla bean, rocky road, toffee swirl caramel, and saffron rose with crushed candied pistachios, the best name brands in the industry have become embarrassingly mediocre. A few months ago when we were sampling The Tea Spot’s Meditative Mind, Ariella lit up and exclaimed, “This would make a great ice cream.” No few words could have made me more excited, blending two of my favourite things into one.  Waiting for her to perfect the recipe, however, was painful. A few weeks ago, her hard work and my patience paid off as she created the  best ice cream I have ever eaten. Culinary genius!

It’s true, I love to bake. Often when I’m feeling a little stressed, I find myself dreaming up interesting ingredient combinations and new recipes to try. So the seed for this recipe was planted months ago, when I started to think about how I could merge my loves for baking and tea and bake delicious treats that could feature our Tea Sparrow picks and exhibit the subtle flavours, the perfectly balanced blends, the quality of the ingredients of the loose leaf teas we were falling in love with.
 
Cookies seemed like an easy enough place to start – there are countless innovative variations on baking blogs of earl grey shortbread,  lavender cookies, black tea biscuits. Which made the project more doable …and also slightly less exciting. I wanted something new; something unique. 
 
And I have to say, this ice cream is nothing less than unique. The way the jasmine and rosebuds pair, balanced by the subtlety of the white tea, all held by the thick, rich, cold creamy base, is enough to keep you entertained when the crickets stop chirping.   
 
Plus, lets face it: it’s summer. Even I’ve tapered my baking off to a bare minimum that allows me to make the most out of fresh summer fruit with pies, popsicles and ice creams. Yum. 
 
I decided to use David Leibowitz’s vanilla bean ice cream recipe we all fell in love with when I made it for Michael’s birthday last year. I used the tea the same way he uses the vanilla bean, placing the leaves directly in the milk and boiling them, then leaving the leaves  to infuse overnight before straining them out of the finished ice cream and freezing it in my ice cream machine. 
 
If you are an ice cream junkie like my Michael and you love tea like we do, you will be licking your bowl clean as you enjoy the last hot days of summer with this tasty treat.
 
Here’s the recipe:
 

Meditative Mind Rose Ice Cream

About 1 quart (1l)

Adapted from The Perfect Scoop (Ten Speed Press)

  • 1 cup (250ml) whole milk
  • A pinch of salt
  • ¾ cup (150g) sugar
  • 4 tbsp loose-leaf Meditative Mind tea
  • 2 cups (500ml) heavy (whipping) cream
  • 5 large egg yolks

1. Heat the milk, salt, and sugar in a saucepan. Place tea leaves into the milk. Cover, remove from heat, and infuse for one hour.

2. To make the ice cream, set up an ice bath by placing a 2-quart (2l) bowl in a larger bowl partially filled with ice and water. Set a strainer over the top of the smaller bowl and pour the cream into the bowl.

3. In a separate bowl, stir together the egg yolks. Rewarm the milk then gradually pour some of the milk into the yolks, whisking constantly as you pour. Scrape the warmed yolks and milk back into the saucepan.

4. Cook over low heat, stirring constantly and scraping the bottom with a heat-resistant spatula, until the custard thickens enough to coat the spatula. (This is a very fleeting moment. Watch carefully to make sure you don’t make scrambled eggs!)

5. Strain the custard into the heavy cream. Stir over the ice until cool, then refrigerate to chill thoroughly. Preferably overnight.

6. Strain out the tea leaves and freeze the custard in your ice cream maker according to the manufacturer’s instructions.

Tea Party 25, 2013

Once a year, foodies from across Vancouver come together to celebrate specialty cuisine, fine foods & snacks, over a bar stocked with international liquors and beers at the event known as EAT! Vancouver. So as I’m sure you can imagine, this year Tea Sparrow found a home at EAT! Vancouver and the show found a place close to my heart. While at the show we signed up a wonderful array of tea enthusiasts and authentic characters. The 25th Tea Party was in dedication to our newest family members.

1. Today we decided to wrap up the loose ends in the tea cupboard. With just a few samples remaining from Tiesta Tea, Mighty Leaf and The Tea Spot we brewed them head-to-head. But what would a tea party be without a new tea blender  for a dash of excitement, so introducing tea blender, 3 Teas.

2. Welcome Tea Sparrow members Jing Jing & Roslyn.

3. For our first round we brew white and green teas. We have Lavender White, Peppermint, Ginger Green by 3 Teas and Jade Tips by The Tea Spot.

4. The first round goes over well, but this is a tough crowd. I’m a sucker for anything with lavender so 3 Teas has my number, but the rest of the table feels the lavender is too overpowering.

5. After the Tea Party we mix some extra white tea I have into the Lavender White. We serve it for friends and it win over the crowd this time, serving the tea both hot and iced.

6. During Round Two we sample the last three Mighty Leaf teas we have: Earl Grey Decaf, Orchard Oolong and Brazilian Fruit.

7. Welcome Mathew & Tanya. As we wait for the teas to brew we smell the blends and discuss the leaves.

8. The teas brew beautifully.

9. The round goes over well and everyone likes the teas but alas nothing scores well enough for a Tea Box.

10. Onto the last round; we brew the herbal teas: The Tea Spot’s Sweet Lullaby and Tiesta Tea’s Granny’s Garden & Ginger Sweet Peach.

 


July’s Tea Box

Tieasta Tea’s Flap Jack Oolong

Description: Remember that excitement of waking up to fresh-made pancakes smothered in maple syrup? Bring back that childlike enjoyment with a nostalgic maple aroma of full-favored oolong leaves, blended with fresh picked walnuts straight from California.

Ingredients: Oolong tea, walnut pieces and maple syrup.

Steeping Instructions: Steep 2 teaspoons  per 8 ounces (1 cup) of not-quite-boiling water for 3 to 4 minutes.

Tea Sparrow Suggests: Steep 1 tablespoon per 8 ounces (1 cup) of not-quite-boiling water for 2 to 3 minutes.

Health Benefits: This tea, known in China as ‘black dragon tea,’ boasts many health benefits such as maintaining healthy cholesterol levels, aiding in weight loss, maintaining healthy teeth and bones, as well as reducing stress and promoting healthy skin.

Zeta Newis, Tea Sparrow Family – “It’s the perfect match to a strong oolong. Mmm…love it.”

Jenny Dent, Tea Enthusiast – “Round subtle layers of coconut nutty bliss. The best oolong blend I’ve tasted.”

Bird Pick’s Tranquili-Tea

Description: Tranquili-Tea is a harmony of lavender, chamomile and mint leaves that offers an herbal combination known to soothe and calm the body. Best consumed before bedtime, this tea has a delightfully melody of sweet floral flavors and minty undertones that truly appeases one’s senses.

Ingredients: Chamomile, Lavender and Mint.

Steeping Instructions: Steep 2 teaspoon per 8 ounces (1 cup) of boiling water for 5 minutes.

Tea Sparrow Suggests: Steep 1 tablespoon per 8 ounces (1 cup) of boiling water for 4 to 5 minutes. Add a touch of honey to round it off.

Health Benefits: Chamomile throughout the ages has been regarded as a medicinal cure-all. It was considered a universal remedy by the ancient Egyptians, and the Romans and Greeks used chamomile flowers as a compress to apply to wounds to speed healing. It’s no wonder that modern medicine has been able to find so many additional health benefits to this flower as a tea. Here are but a few: chamomile tea boosts the immune system and fight infections associated with colds. It also helps relieve muscle spasms and menstrual cramps, relaxes the nerves, soothes the stomach, reduces inflammation, improves liver function, helps relieve back pain and rheumatism and is most well-known as a sleep aid.

Tea Party 24 – 2013

The Tea Parties are always a ridiculously good time, filled with laughter, humour, and general mayhem. And why not? The Mad Hatter has always been a suitable role model for young girls and boys. This Tea Party embodied all that I hold dear. So I tip my hat with a huge thanks to Ariella, Jenny, Michelle and Evi to an incredible and wacky afternoon we all spent over tea.

1. The three contenders today are the Tea Spot from Boulder Colorado, Samovar Tea Lounge from San Francisco and Le Palais des Thés from Paris, France.

2. As Ariella tries to set up the score cards and I brew the first round of teas the laughter begins. After about 4 mins of jokes the timer goes off just to discover no one has poured the water into the tea pots.

3. Round one is the green/white tea brew off. The Tea Spot’s White Wedding brings in three 10/10 and two 9.5/10. For the first tea of the day…unheard of! Congratulations Tea Spot.

4. Evi takes a closer look at Samovar’s Ryokucha, a sencha ground tea.

5. Welcome Tea Sparrow member Evi to her first Tea Party.

6. Everyone is hard at work, just barely. We decide to draw self-portraits instead of writing our names on the score cards.

7. Round two goes to Samovar’s Cacao Mint. Fun playful sweet taste that seems to match the mood of the day just right.

9. Evi is a singer and writer so she is particularly inspired by the Tolstoy’s Sip blend from the day’s third round.
